Maintaining the health and wellness of the herd is a top priority for us and our business. A lot of time, planning, and expense has been put into the corrals and working facilities of our operation to minimize stress and maximize animal welfare. We emphasize humane, low-stress handling and work hard to “train” the cattle to a variety of situations. Our crew personally go through the corrals and pastures checking cattle rain or shine, whether on foot, UTV/ATV, pickup and even horseback, every single day.
We feel that all of this helps our cattle to be very calm, which leads right back into safety and low stress handling. We closely monitor all cattle in our care, always ensuring a clean environment, cattle comfort, and excellent nutrition.

Ordering Your Beef:
All our beef is sold as “Mixed Quarters”, “Sides of Beef” or as a “Whole Beef”. By selling our beef this way, we can ensure transparency and provide you with absolute control over where your beef comes from, how it was raised, how it is processed and the assurance that it was sourced from a single animal.
When buying a Quarter of Beef, we typically offer a “Mixed Quarter” to provide a better deal for everyone. As the name implies, a “Mixed Quarter” is (25%) of a single animal, they are also popularly known as a “Split Halve.”
By combining a balanced selection of cuts from the front and back quarters, you achieve better variety and value, maximizing steaks and whole muscle cuts with minimum “wastage”. Below is a full breakdown of typically expected cuts, developed through close collaboration and partnership with our Artisan Butchers to maximize the quality and quantity of Steaks you will receive with your order.
Also be sure to ask about our sausage, jerky and charcuterie options. These are seasonal and depend on the exact butcher, but can be a great option for those desiring less ground beef, and is typically a no, or low-cost upgrade to your order due to the savings in shipping!

A full Side of Beef provides you not only with a bounty of top quality beef, but also allows for a greater degree of customization during processing. We are happy to work with you and the processor to try and meet any requirements or requests you might have including full primal cuts. If you wish to go with the “standard cut”, simply double the quantities listed above for the mixed quarter to get an idea of typical yields.
Typical Amount of Beef from a “Full Side”: Approximately 380 Pounds**
Whole Beef (Entire Animal)
A domain usually reserved for only our most carnivorous customers, caterers, independent restaurants and other organizations. A full beef provides the ultimate level of customizable processing and a truly exceptional quantity of the finest beef available, cut to your exacting specifications.
When ordering a full beef, we are happy to work with you and the processor to meet any special requirements or requests you might have including full primal cuts and aging practices. If you wish to go with the “standard cut”, simply quadruple (4x) the quantities listed above for the mixed quarter to get an idea of typical yields.
Typical Amount of Beef from a “Whole Beef”: Approximately 760 Pounds**
Typical Lead Time:
In order to ensure the ethical treatment of the animals as well as the proper processing and dry aging required for beef of this quality (17-Day Dry Age minimum), please expect a minimum of 4-6 Weeks between placing your order and receiving your beef. Not to worry, our friendly staff will keep you up to date every step of the way.
In order to ensure maximum freshness and quality, at the time of your order we will coordinate arrangements for transport and processing. To ensure optimal quality, we age our meat for 17 days before packaging to allow the true flavor and tenderness of the beef to shine through. Once processing, aging and packing are complete, your order will be ready, and we will contact you to arrange final details for pickup or delivery.

We can arrange for direct shipping to the vast majority of customers* in the Lower 48 states. With our proprietary packaging, and real-time order tracking, you can rest-assured that your beef arrives safe, sound and delicious!
*Due to the perishable nature of the product and need to preserve the freshness and quality of your order, we depend on FedEx express shipping. If your address is not covered under our standard shipping options or able to receive express shipping, we are happy to work with you to find a solution if possible!
Local customers are more than welcome to pick up their beef in person from the processor of their choice and will receive a discount of $150 per quarter of beef.
Just prior to completion of processing, you will be contacted via your preferred method to arrange a pick-up window that fits into your schedule.

We feel it is much better to under promise and over deliver than leave you disappointed, in the majority of circumstances, you will receive MORE than listed. Remember, every animal is unique, so while we can closely estimate the finished result, there will always be some variation.
